I'm assuming it's their car. Assuming you have insurance, make a claim under the liability part of your policy--that's what it's there for. May be an exception if it is deemed a loaner.
However their insurance should cover them for the damages

Depends what the medical records say, depends on if you are full or limited tort, depends how much you have said to the insurance company. So far you've done an excellent job of minimizing your injuries. If you have any further problems I suggest you go back to your doctor to be checked out.

I think so, unless your running lights are that much dimmer than the full-on headlights. I know my car (a Saab) has its lights on all the time, and I never have to turn them on at all -- day or night.

They can mail you a citation. You can fight it by pleading not guilty. You need to explain your speed, that you had slowed for snow, etc. Problem is you did go off the road so something was more slippery than it seems.
