Q: Legal Liability for our Friend, allowing us to hunt his property?
My buddy has land that my company would like to hunt on. In case of an accident (shooting another land owners cow, damaging property, etc.) how would HE be safe from lawsuits, etc from those 3rd parties?

Simple: you obtain adequate liability insurance. But keep in mind that potential liability for shooting a cow is minimal compared to that for shooting another human. I'm not suggesting hunting is unsafe; it can be very safe. But the exposure is high.
I suspect that you want to be advised to form a LLC. In most places, limited liability for a corporation or LLC can be "pierced" (disregarded) if the activities conducted by such a company (renting-out land, for example) are woefully under-insured.
