Generally I have had luck getting coverage through the farmer's insurance, but if you have collision run it through that and let them chase the farmer for the information.
While the owner of a farm animal is responsible if they are allowed to leave the farm, if it were such that you could have avoided the cow--that you could have missed them etc--then you may have some or all of the fault.
