A man, I'm assuming he's a process server, has been coming to my door once or twice a month for the last 8 months. I'm never home when he comes, the man has spoke with my boyfriend and tells me that he has a "legal document" for me, but won't leave it with my boyfriend and refuses to tell my boyfriend his name and who he is working for. He comes at random times, sometimes 8-10PM and on Sunday's. I've called the courts and the sheriff to see what I could be getting served for, but I have no cases pending. Both myself and my boyfriend are getting annoyed by this man and I would like to know what, if anything I can do to stop this?

This is not normal. A process server will not come by for 8 months. A debt collector might, but the duration and lack of a follow-up in the mail (via a demand letter) makes me think that this is not a debt collector either.
You may want to consider installing cameras to record this person. If you have more information about the person you can pursue police action and/or restraining orders.
