Q: Two Kentucky state officers were about 1/4 mile in front of me. Got me 78-55 what can I do?

The officers had pulled out of a road/driveway about 1/4 mile or so ahead of me. One pulled off to the left in a gravel spot and the other in a small parking lot by a stop sign. When I approached the intersection the first officer on the left turned on his lights. So I pulled over out of the way. Myself and my passengers were searched including a teenager. Searched my vehicle and when asked was not given a reason at all. Said I was speeding but how would they know if they are so far ahead of me. Also I may have been going 65-68 not no 78. The ticket is prepayable but no date on it is set if I choose to fight it. Also the officer gave me a seatbelt ticket for not wearing it. I took my seatbelt off when he asked for my DL. Also the ticket has court costs added but no court date. What do I do?
