You will have to prove you paid him in cash.
It will be helpful if you have a bank statement showing that you withdrew cash from your account on or about the day of the title transfer and if you can obtain the seller's bank statement showing a deposit in the same amount shortly thereafter.
Otherwise, it will depend on who the judge or jury believes.
