I'm leaving for vacation and cannot be there on my court date, what are my options? Can I still change my court date?

Did you dispute it or pay it? It looks like the latter, so court appearance is not necessary.
So let's say you have 2 speeding tickets in a year, but they were both plead down to parking tickets, simple violations, etc and you plead guilty to that, would a 3rd speeding ticket result in your license being suspended?

If the tickets were downgraded the original accusation doesn't matter, so you are essentially getting the first speeding ticket.
