Q: Was ticketed for exp. registration. The reg. expired 10/2017. On the ticket, the officer wrote exp. 10/2015. Recourse?
I also immediately renewed my registration, while the officer was writing the ticket. Is this error in dates enough to get the ticket dismissed?

Not enough information. Was the date of the ticket before or after 10/2017? If the date of the ticket was after, I can't see why the difference between 2015 and 2017 would matter.
Your second argument is more interesting. If your registration shows that you renewed on the same day as the ticket, it will be difficult for the Court to find that you weren't registered at the time of the ticket.
