Q: Can I sign a temporary contract with a company meanwhile another company (no contract sign) is sponsorin my green card?

A future employer is arranging me my green card; they are paying immigration lawyers and all. We already sent all the documents, paid fees, and I will have my biometrics next week. I will sign a contract as soon I have the GC. The process is taking time and in the meanwhile my current employer in USA (different employer) wants me to sign a contract for an extra year working with them (restarting in August). The problem is that my current employer needs me to sign the contract these days. I wonder if I can sign a contract with my current employer (my safety net in case my green card is rejected), and at the same time I can continue with the process for my future and permanent employer. Obviously, as soon as I obtain the green card I´d quit to my temporary job, I haven´t signed any contract with this future employer yet, we are waiting for the green card, but I am also wondering if I am doing all this correctly.
