Wondering can I file for joint custody or visitation without involving child support. I take care of my son financially but not through the court system

You don't say, but there are two ways can work. IF you are the father and don't have custody and there has never been any court case, you can ask the court for parenting time with your child. Without a doubt, the issue of child support will come up and you will be required to pay support -- back as far as 24 months before the filing of the action.
IF there has been an order and you are commanded to pay support in that order, you are already on the hook for that support and must pay it.
You can't excuse your obligation to pay support because she won't let you see the child. One has not bearing on the other.
