It appears that your dispute is probably over the cost of repairs, not salvage and replacement. From your description, it doesn't sound like the type of accident that would leave a car totaled. Aside from legal remedies in court or arbitration (depending on your policy), you could look into to working with the adjuster. If you and the collision shop present good reasons why the insurance adjuster's repair appraisals are too low, reputable insurance carriers will usually work with you.
