She’s sending texts saying if I don’t pay her thousands of dollars she’s going to the police. She also has a video recording of me talking to her that she illegally recorded while the phone was in her pocket.

A: You need to hire a criminal defense lawyer right away to represent you in any upcoming law enforcement sex assault investigation.

If the police start asking you questions, other than truthfully telling them your name, tell the police for every other question that you 1. want to invoke your right to remain silent and 2. that you want your lawyer present during questioning.

I would choose a lawyer right away that you can speak privately to about all of this, including that recording. Depending on the circumstances of the recording, she may have broken the law.
