Q: What are my legal options?

my moms friend borrowed $8000 from me and promised to pay me back $16,000. I agreed and had her sign a contract stating that she is borrowing $8000 and pay me back $16,000 on July 15th, 2015. It has now been over a month and I haven't received any form of payment. What are my legal actions?

You can file a lawsuit for breach of contracts, but the first step is to review the contract (in the context of Alabama law). Collecting the money may be an issue. Talk to a local business or contracts lawyer. A strong letter from a lawyer might help.

Q: When recinding on a contract for a car, does Saturday count as a day for the 72 hour rule?

I signed the paperwork on Thursday but my question is does Saturday count as a day?? In reference to the 72 hour rule.

Check the language of the rental agreement to see whether and how it can be cancelled.

Handwritten contracts are enforceable. The question however is whether the contract was written properly.

The statute of limitations varies depending onwhat kind of contract you are refering to, e.g., contract under seal, negotiable instrument, etc. You should let an attorney in your area take a look at the contract in question.
